I’ve shared this before on my old blog, but I love it so much that it’s worth a repost!  Ice cream that will fit into your life without getting you into trouble with your trainer ((wink wink)) and that you’ll happily feed your kids as a bedtime snack! Can’t beat that!

6oz unsweetened cashew milk (you can use unsweetened almond or coconut, but cashew is thicker & creamier)
2 Scoops chocolate protein powder
1T dark cocoa powder
1T Stevia (powder, not liquid)
1/2 t hazelnut or almond extract
2 1/2 C ice

Use a high powered blender like my beautiful Vitamix and blend all the above ingredients, then add 1/2 t xanthan gum and blend until creamy! This makes more than enough to share, so grab a couple bowls and enjoy!
